Beef
from Callicrate Beef



Callicrate Beef operates a 7,000 acre ranch based in Colorado Springs.  Here you'll discover a "Pasture to Plate Protocol." This humane treatment and management of animals results in reduced stress and avoidance of preventable disease within the herd.  Callicrate's practices include the elimination of sub-therapeutic antibiotics and the absence of growth promoting steroids or hormones in the animal feed.  Cattle are grass pasture fed and supplemented with a well-balanced natural grain finishing diet in their final 30 days.

The Wagyu and Angus genetics of Callicrate cattle results in premium beef that tastes tender and juicy. Wagyu cattle genetically produce less outer-body fat around the perimeter of their muscle cuts and in place deposit more fat within the muscular fibers.  The result is bursts of flavor marbled throughout the meat.  Callicrate Beef is aged for 2-3 weeks to obtain optimal tenderness and flavor.  Their "wet aging" process lends to a more mellow beef taste.

 




Callicrate cattle are finished at a younger age than most commodity cattle, resulting in more tender beef with a lower percentage of connective tissue throughout the meat. The unique processing protocol that Callicrate incorporates is an on-premise mobile meat processing unit. This innovative trailer travels to the livestock, rather than transporting livestock to distant processing facilities.  On-premise farm processing decreases the stress on the animal, removes the cost and environmental impact of transporting cattle to a processing plant and allows for byproducts to be composted to add fertilization back into the land. Processing in this manner best considers the land, animal and people involved.

Mike continues his active involvement in social and political efforts to improve the interests of family farms.  He understands, educates and works to find solutions on negative actions within the modern meat industry. He maintains a blog, No-Bull Food News, to help educate consumers and further the accountability of the beef industry.
