On The Truck


Colorado Sun Tofu is a new, non-GMO tofu produced in Northglenn, CO.  Now available in food service pack sizes, this tofu product is produced in both medium firm or extra firm consistencies.  Consider adding tofu to your breakfast scrambles, marinated and grilled on the BBQ or pureed into delicious vegan desserts.

Bee Swarm Hotline 





May and June are the busiest months for bee swarms in Colorado. If you are lucky enough to witness one of nature's most fascinating migrations, a swarm, DO NOT ATTEMPT TO KILL THEM! Please do not spray them with insecticide or water! These bees are "survivor bees" and are crucial to our environmental health. What you can do is call the swarm hotline (970-213-3099).

Beekeepers throughout the state are ready to be dispatched to collect the bees and transfer them to a new home. This is a FREE service and response is generally, within an hour or two. Contact the Swarm Hotline at 970-213-3099

Truck To Table



Tomato Tapenade
on Flatbread 

    

2 c dried tomato in oil (reserving some oil)
1/2 c olives

2 white anchovies

4 cloves garlic

2 T red wine vinegar

2 T thyme
¼ c water

salt

pepper

  

Place all ingredients in a Vita Mix blender (or food processor) and adjust the consistency with the reserved oil from the tomatoes. Puree until smooth.  Spread sauce over Etalia artisan gluten free pizza dough.  Top with mozzarella and your favorite local, fresh veggies such as Hazel Dell mushrooms and Rocky Mountain Fresh tomatoes.

SOURCE Local Foods is thrilled to be hosting the Farmers Market Tent again this year at the Chefs Club by FOOD & WINE at the St. Regis!  We will feature 12-15 local farmers, ranchers and artisan food producers at this event where chefs, food writers and others from the industry will sample products and hear the great stories of several SOURCE vendors.

Letter from CEO & Chief Fungi

 

Hello Friends and SOURCErers!

It is with enthusiasm and excitement that I am writing this letter to you all.  Enthusiasm and excitement for the emerging summer produce season, and for many exciting developments that the SOURCE team has been working on.  Please read below on this newsletter to find more in depth information about great local produce that is now coming off the fields!  Ample water in much of the state should allow for a bountiful produce season over the next several months, according to many of the farmers that we're working with.  Please also be sure to check out our Produce Availability Calendar and our interactive Local Sources Map at www.SOURCELocalFoods.com for more information!

We are also very excited to announce a very special partnership with Veritable Vegetable (VV) - one of the best regarded and respected organic produce distributors in the country.  As many of our customers have asked us to help balance produce supply with the seasonality and limited supply of many items here in Colorado, we went on the search for a partner that would allow us to offer more value to our customers while maintaining our mission and brand promise to support sustainable food systems and provide source-identified products to our customers.  With over forty years distributing certified organic produce, Veritable Vegetable, a Certified B Corporation, has the following mission statement: "VV works hard to actively improve the sustainable food system by supporting organic farmers, increasing access to fresh produce, strengthening communities, and cultivating a fair and dynamic workplace."  Although we remain deeply committed to providing our customers with quality, local produce, we know that this partnership with VV is another step in building sustainable food systems with our customers and stakeholders. 

And, talking about building sustainable food systems - we are thrilled to have found Colorado Mills - a producer of Colorado-grown, non-GMO sunflower oil.  This high-oleic vegetable oil is expeller pressed in Lamar, CO without any solvents, and thus has no hexane or other petroleum-derived chemical residues.  Available in both 750 mL bottles for retail and 35 pound totes for fryers, Colorado Mills Sunflower Oil provides restaurants and retailers alike a great opportunity to use a very healthy, Colorado-grown and processed oil, and is a great story-telling opportunity as well!  Moreover, with SOURCE Local Foods' sister company, RECYCOIL, you can benefit from additional savings, if you are also using RECYCOIL for your used fryer oil recycling service (RECYCOIL processes used cooking oil and supplies Blue Sun Biodiesel, Renewable Energy Group, and High Plains Bioenergy with the oil for biodiesel production). 

We are very excited about these developments - the burgeoning local produce offerings, the Veritable Vegetable partnership, and the Colorado Mills Sunflower Oil - all expanding the opportunities for and ways in which we're building sustainable food systems together.

Produce Watch


Like the weather forecast, produce vacillates greatly at this time of year in Colorado.  Spring snow, hail and high winds are often a great force before the summer heat.  If you don't like the weather, just wait a few minutes...and this holds true for produce, you need to wait only a few days or weeks for more sprouting and ripening of these beautiful treasures from our Earth.

The month of May proved bountiful with hefty stalks of asparagus, hearty spinach, and spicy Easter egg radishes

from Milberger Farms.    

 


Basil, mint and microgreens remain in steady supply from our aquaponics farmers at KM*2 Farms and Freshtable Gardens.  Spring mix lettuce, baby chard and baby collards are all now available from Ollin FarmsRocky Mountain Fresh greenhouses continue to produce: pickling, English and mini English cucumbers, along with amazing beefsteak and heirloom tomatoes that will whet your appetite with a taste of summer.

 

 

Just entering June we're seeing several field crops emerge, including field lettuce, shallot and garlic scapes, green onions, radishes and snap peas.  Kale, cilantro, parsley and summer squash are not far behind.

Tania Parra Marin

Tania started in the food industry as a server in Long Beach CA. After nine years in food service, she shifted to the beverage industry, where she first worked for Vita Coco. This June marks Tania's one year anniversary in Colorado.  Over the past year she has represented four additional beverage companies: Jin-Ja , Motto, Kona Red, and Chameleon Cold Brew through several grocery channels including King Soopers, Whole foods, and Vitamin Cottage. 

What excites Tania about SOURCE Local Foods is being able to make a difference with people. She strives to see small businesses become bigger and loves to be a part of that process.  Through this process, she greatly values the sense of community that is built.  One of Tania's specialties in her kitchen is enchiladas, and she prepares them three way - red, white, and green!
