On The Truck

 

Coffee contains 98% water. NüBrü Coffee uses only the best - pure Rocky Mountain water from Left Hand Creek and St. Vrain Creek with headwaters along the Continental Divide. It's bottled fresh, pasteurized using cold pressurization and made from natural and organic ingredients.  Oh, and did we mention it tastes delicious and refreshing!

Truck To Table

 

   

 

Garlic Ginger Beef

featured on the New Mi Sandwich,  


2ea Beef Brisket 10#avg., sliced into 1" thick strips, against the grain

3Qt. Pilsner

1C Rice Wine Vinegar

4ea Yellow Onion, peeled and julienne

4C Ginger, fresh, minced

2C Garlic, fresh, minced

8ea Jalapeno, stemmed, ¼"slices

1C Brown Sugar, packed

1/4C Coriander, ground

2C Cilantro, lightly packed

1/4C Salt, kosher

 

Season the brisket with salt. Sear the brisket on all sides in a pan on medium-high heat. Meanwhile, combine all ingredients in a deep hotel pan. Add seared brisket to the other ingredients. Cover tightly with foil. Braise for 4hr at 350*F, or until fork tender. Pull, season to taste with salt, chill rapidly, reserve braising liquid for service.

Hello Friends,

 

As you know, building sustainable food systems takes a lot of work, and is much more a process and journey than it is a singular destination. I think that many of us in the community have the view that our work and our impact will continue to unfold over many years.

In my opinion, one of the most enriching aspects of this great adventure is having the opportunity to work with and learn from exemplary leaders and profoundly innovative organizations working in our rapidly evolving civic and market ecosystem.  

 

B Lab is one such organization. A nonprofit corporation dedicated to using the power of business to solve social and environmental problems. B Lab has certified over 1,000 companies and organizations as B Corporations! Notable among these are Colorado-based Door to Door Organics , Bhakti Chai, New Belgium Brewery, and The Tea Spot, just to name a few.

 

I am very happy, on behalf of the entire SOURCE Local family, to announce that SOURCE Local Foods is now a Certified B Corp! SOURCE has joined the ranks of many excellent organizations here in Colorado (44 companies), throughout the United States (752 companies), and indeed worldwide (352 companies in 34 countries), who are all working to create our sustainable future. You might say that the growing B Corp community is at the heart of Team Future!

 

Through the work we're doing at SOURCE, my team and I have connected with so many wonderful, impactful food companies and stakeholders. We have an impressive local/sustainable food ecosystem here in Colorado, made up of many organizations who are also part of Team Future, and who could consider taking the B Lab Assessment and working toward B Certification. We encourage you to take a look and to connect with B Lab - with offices recently opened in Denver!

Produce Watch

 

As we are peaking in the Colorado produce season, there is so much to be adorned.  Peaches are coming to us steadily from Black Bear Orchards and Kokopelli Produce, both located in Palisade, CO.  Melons are sunkissed, delicious and fresh in from the fields including Full Circle Farms organic honeydew and seedless watermelon.  The first harvest of Bartlett pears are here and apples are soon to follow!



Peppers are vibrant ranging from Milberger Farms sweet yellow mini peppers to Ollin Farms mixed purple, red and green bells.  Eggplant, okra, green and grilling onions, leeks, and sweet corn continue to funnel in from Pueblo, CO.  Beets galore! We have red, gold and chiogga varieties; packed tops-on in bunches or loose in bulk bags.  Squash is bountiful, in traditional yellow and green zucchini.  With fall approaching, pumpkins and other winter squash will soon be here.



Our salad offerings will not disappoint.  An array of organic greens are available from Arkansas Valley Organic Growers and Full Circle Farms including baby and full bunch kale and chard. Baby lettuce mix and arugula can be tossed with field cucumbers, radishes, cabbage, Hazel Dell mushrooms and Ollin Farms heirloom cherry tomatoes.

 

From our produce partner Veritable Vegetable, we continue to provide access to specialty organic produce items that do not grow here in Colorado.  Check out these beautiful mangoes below!

HR & Administrative Ninja

Elise graduated from CU Boulder in 2013 with a bachelor's degree in Psychology and Communication. Post graduation, she spent six months exploring New Zealand and working as an administrator in two separate government agencies.  Now a part of the SOURCE team, Elise is most excited about the opportunity to put her administrative skills to work for a company devoted to sustainable solutions and contributing to the world in a positive manner.  Cooking at home, Elise has been learning how to grill and loves throwing a good steak on!

 

 

Patrick T Welch

Gastronomy Consultant, Denver Outside Sales

 

Before joining SOURCE, Patrick spent eight years in wholesale wine sales in the Denver metro area and western USA.  Patrick's love of food and wine goes back almost twenty five years, working his first job at a fine dining restaurant in New Jersey while in college.  Patrick is looking forward to joining a young company with significant growth potential. He shares a dedication to the same singular goal of growing the organization while promoting healthy and sustainable food production.  There are so many dishes Patrick enjoys cooking, one of his favorites is Thai green curry with vegetables, rice and chicken.   



Tony Steven Ybarra

Tony comes to SOURCE from previous management postions at Izzios, Panera Bread and The Brickman Group.  In his spare time he enjoys creating websites and Facebook marketing. Tony is excited to be surrounded by the highest entrepreneurial spirited group of people he's had the pleasure to work with.  He also enjoys many other aspects at SOURCE, such as the fast paced environment and fantastic concept.

Cooking at home, nothing beats a good, juicy steak!
