SOURCE Local Foods now supplies butter from local Royal Crest Dairy butterfat.  Our butter is available in salted retail packs under the Royal Crest Dairy brand or in unsalted food service blocks under
the Fall Creek brand.

SOURCE Local Foods is now offering a program to further extend local foods into your community.  This local Buying Club is for organizations (fitness/lifestyle, faith, non profit, community groups, etc...) interested in sourcing amazing local food products at wholesale prices. Truck To Table

 
Mushroom & Kale KimChi Pizza with Sunflower Arugula Pesto, Cashew Chèvre & Almond Date Crust


Recipe compliments of  

Daniel Asher, Culinary Director of
Root Down and Linger  

  

Crust:

1C raw Almond meal

2 medjool dates, chopped

3 sundried tomatoes, chopped

1/4C olive oil

1/4C flax meal

1 Tblsp Hemp Hearts

1 Tblsp Sesame seeds

1 scallion, chopped

pinch oregano

pinch sea salt

 

Method:

Combine all ingredients in food processor and pulse until "dough" forms. Remove from machine and form into a round pizza crust. Can be used as-is OR dehydrate at 115 for 8 hours for a cracker style crust

 

Sunflower Arugula Pesto:

1C raw sunflower seeds

1/4C raw tahini

1/2C olive oil or grape seed oil

juice of 1 medium lemon

1 clove garlic

1 small shallot

1/2C loosely packed fresh basil leaves

1/2C arugula leaves 

sea salt to taste 

 

Method:

Combine all ingredients in high-powered blender and cycle until smooth puree texture is achieved. Additional oil may be needed to reach desired consistency.

 

Cashew Chèvre:

3/4C raw cashews, covered in 2C filtered water & soaked overnight at room temperature

2 Tblsp lemon juice

1 Tblsp nutritional yeast

1 Tblsp gf tamari

salt & cracked black pepper to taste

 

Method:

Combine all ingredients high powered blender and pulse until 'goat cheese' texture. Add some of the cashew soaking liquid as needed.

 

Toppings:

-sliced cremini mushrooms, lightly tossed with gf tamari & sesame oil

-Ozuke collard & kale kimchi, drained

-baby heirloom tomatoes, halved, lightly tossed with olive oil & sea salt

-watercress leaves 

-microgreens or chopped herbs (dill, cilantro, tarragon, chive) as desired

Letter from CEO & Chief Fungi

Greetings Friends!  

 

The holiday season is behind us. There's a lot of snow in the mountains. The days are getting longer as we enjoy one of the most special times of year in Colorado! In anticipation of springtime - birds chirping, fields getting planted, calves and lambs birthing, and celebration of renewal - we are in the "delicious" phase of winter. The skiing is great, chefs all over the region are planning new menus and exciting events for the seasons ahead, and farmers are gearing up for planting (or, in some cases, enjoying some much deserved respite in the warmer climates of Mexico!).

 

At SOURCE, we are very excited about the year ahead, and see it as the year of taking off and cultivating community. One of our favorite aspects of the work we're doing, to build sustainable food systems, is having the opportunity to meet and build friendships with people all over the region engaged in the food culture (r)evolution! Food really does bring us together in a profound way, and really is central to the cultivation of our health, well-being and community. Whether in our own kitchens preparing stir-fry with our children, at a restaurant raving with strangers about the best pot roast in town, on the ski slope enjoying hand-crafted Kombucha and greenhouse grown tomatoes at 11,000 feet, or in a market chatting with the butcher about his new Charcuterie project - - all of this weaves the fabric of community throughout Colorado.

 

And what a community it is! Amazing friends all over the state provide memorable dining experiences and a real sense of place about food and (agri)culture here in Colorado. Whether at Root Down or Timberline in Denver International Airport, or up in the high country at Aspen Ski Co's Base Camp or Zach's Cabin at Beaver Creek, Coloradans and visitors alike can enjoy our best local foods high up in the mountains as well as just before (or after) getting on a plane! The Famous Steakhouse and Hunt or Gather in Colorado Springs, Ploughboy in Salida, West Flanders Brewery in Boulder, and Jonesy's Eat Bar and Appaloosa Grill in Denver offer all of us great local fare prepared with love and creativity. Our friends at Door to Door Organics deliver local and organic foods right to busy families' homes, and many friends at Whole Foods provide a multi-sensory, in-market experience while providing hundreds of small, local farmers, ranchers and artisan food crafters important access to neighborhoods and communities throughout the region.

 

Approaching our two year anniversary of distributing local foods this April, my team and I are thrilled, honored and grateful to be a part of cultivating our community while we see the local, natural and sustainable food culture continue to take off!

Our Fantastic Drivers!

 
Every person involved on the SOURCE team plays an integral role in contributing to the smooth operation of our distribution company.  Our delivery drivers are a huge piece of this puzzle. Through rain, ice, wind, chains and closures - our drivers continue to persist in delivering fresh, local ingredients to customers' kitchens and retail shelves. Not only do they do this in a time sensitive manner, but with the utmost level of customer service and passion for our local, sustainable food system. 

 

One of our cherished drivers is Larry Lobato. Larry has been working

with SOURCE Local Foods since August 2013. He's referred to as our "SOURCE Trooper," with decades of produce management experience, accumulated from 18 years working at King Soopers and 3 years at Safeway. Larry is extremely well versed in food handling, quality assurance and waste elimination.  

Larry's motto is simple and true, "if there's something we can get for you - let us know and we'll work on it!" One of his favorite aspects of SOURCE Local Foods is getting to know all of the great Colorado products produced and manufactured in our very own state. What driving challege brings Larry the most satisfaction? Driving truck R1 out to DIA. "Driving alongside planes taking off and landing is one of the biggest thrills!"

We are happy to announce that SOURCE Local Foods is now a direct distributor to Whole Foods Market! As a recent recipient in the Whole Foods Market Local Producer Loan Program, SOURCE Local Foods was awarded for the value-add that we bring to the region by helping emerging Colorado growers and manufacturers. In developing this new partnership, there are many ways SOURCE can assist your brand in gaining greater reach:

  • If your product is not currently carried in Whole Foods, we are happy to assist with their intake process to get your product placed at the Colorado store or regional level
  • If your product is only in a handful of stores, we can help expand your reach to every store in Colorado with direct distribution
  • If you are still taking orders from store buyers directly, we can distribute your product for you, in order to free up your time to focus on other aspects of your business

A big welcome to our newest team members!


MP
Dreamweaver Delivery Driver/Denver & I-70 Outside Sales

Mike Powers (AKA MP) joined SOURCE in December 2013. He has cooked as a chef on and off for years, and remembers getting a serious burn when cooking French toast early one morning at his Grandmother's house when he was about four. He hasn't stopped cooking since! MP would like to see the company involved in education programs for local elementary schools and culinary schools. Mike's favorite dish is a salami sandwich with French fries.

In addition to rocking it as a customer service and truck driving expert, Mike is now also providing sales and service support to chefs and F&B managers in parts of Denver and along the I-70 corridor from Golden to Summit County.

Dan Blei
Warehouse and Delivery OPS F1 Hybrid

Dan spent 2 years as a full time employee on a small-scale organic farm in New Hampshire, specializing in fruits, veggies and flowers. Since relocating to Colorado, Dan has worked at Aspen Moon Farm, an organic and biodynamic farm in Hygiene, and at OAK at fourteenth in Boulder.  He thinks landing at SOURCE is an excellent balance of these two types of work.

Dan is excited to connect farmers with a community that is hungry for locally produced food. Dan's go-to favorite dish is arugula pesto pizza, topped with any and every vegetable in season on his home-made crispy crust. Sounds like he and Chef Daniel of Root Down are going to have to have a cook-off!
